A mini monograph in which Balfour provides a distanced yet voyeuristic view of the various interactions and flurry of activity that occur in the alleyway next to a Beijing restaurant. Therefore publicizing the normally private rituals of an army of uniform-clad chefs on a kitchen break, food deliveries and hurried staff arrivals and departures.
